I have had two other Dexter fillet knives for almost ten years and have always loved them so that's why I bought this one for cutting meats for With Dexter knives, the edge can easily be brought back to life when needed. My experience with it so far has been very positive, and I have used it several times. The knife is just the right size, and it does a good job for half the price of similar ones. There is only one improvement I can think of. It would be nice if it came with a thin cover to protect the edge and fingers when kept.
