This is an expensive tool that has been on my wish list for a long time. I have tried glass and wet sandpaper, diamond stones and Japanese water stones until it became affordable. First I tried the Chef's Choice sharpener, which didn't work and did not allow you to vary the angle. Having sharpened just a few knives, I then went to a belt-style sharpener that ate through belts almost every time I sharpened them. My only reason for giving it three stars is because a bolt or should I say a whole bunch of bolts broke due to a bursting nut After its first use, a thread piece holding the under bar that holds the tool in the square edge jig broke. I found it amusing that the bolt did not break when the tool was tightened When you loosen it to take out the tool, you broke it. The broken bolt was so tight in the under bar it was difficult to get it out, as it broke flush with the back of the bar, and it was secured with some sort of lock -- Compound that is tightly woven. My next step is to look for a new bolt that fits perfectly. Since the bolts of this system are so expensive, it seems like they should be of better quality. But, I guess nothing will be perfect. Additionally, the plastic side next to the leather honing wheel is soft enough that when the system runs longer than 30 minutes, it pops out and hits the wheel, which can make rubbing sounds. I would have made this part of the tool out of the same metallic material to avoid this problem.
A remarkable job of sharpening is done by this product. The tool is costly, but it's a very useful one. Knives can be sharpened with it in an impressive way- They stay sharp all the time. This is a really easy to use program. As soon as I read the manual, I was on my way. So far, I've sharpened all of my tools.
