As far as I understand, coffee tannins build up over time and coat stainless steel (tea stains stainless steel as well). Also, I found it difficult to clean all the stains from my stainless steel thermos cup after a couple of months of daily coffee drinking. It is easy to clean my carafe and thermos with a mix of very hot water and either white vinegar or powdered If you rinse it well, it will look as good as new.
It does not hold the temperature as well as a thermos bottle its hold time is only around 4 hours. A portion of the liquid will also determine the length of time the hold will take, a half full or less will drastically reduce the amount of time the hold takes.
