They are non-GMO, but there is no guarantee that they are organic. I've been using the seeds for a few years and they produce lovely groundcover plants. The hens have a great time with this cover. When it starts to dry out in early summer, I compost the majority of it.
Yes, I believe that if you allow them to grow and mature, they will eventually produce seeds. Mine aren't quite ready yet, and the chickens eat them, so there won't be any seeds. Unless I take care of the chickens.

For my chickens' run, I used this seed in a raised bed (with a hardware cloth lid). It is extremely popular among them.
I soaked these seeds in a jar overnight before rinsing them twice a day. Today is day 4, and I've got some lovely sprouts in the jar, which is nearly full! Every few days or so, I toss them to my chickens, who enjoy them as a healthy snack. br>Only one for flavor, as I wasn't brave enough to eat them!.

In plastic vegetable containers, these sprouted up quickly for me. I think a resealable bag would be a good addition. I moved the seeds to a container that closes after they spilled several times.
I was very disappointed when I purchased broccoli from another vendor. My gals are crazy about this stuff! I keep it in mason jars as sprouts and in a 2x4 growing enclosure in their run with hardware cloth over it so they have something to peck at on a regular basis. I'm not sure if the heat is the cause or if the chickens ate them because we're in the middle of a heat wave. I wrapped it in straw hay to give it a fighting chance, but we'll see what happens.
Some of the seeds germinated in as little as 24 hours. In just 48 hours, you'll have a great seed mix. I advise that you prepare ahead of time. It is more efficient to germinate before you plant. Simply plant these in a well-draining soil, cover with a light layer of top soil or compost, and wait for your grasses to emerge.
