I'm afraid I can't give you a temperature reading, but it's perfectly safe when aligned with the skillet handle. It can be handled without the use of a hotpad.

Will this prevent oil/grease from escaping into the air as a result of the steam coming off the pot, or will it only prevent actual splashes?

It prevents steam from rising into the air and splattering onto the surface of the pan. This item is fantastic; I've always been afraid of burning myself when frying or sautéing in a pan.

Is the mesh made of stainless steel or other materials?

Stainless steel is used for the mesh. However, if used over a pan on a gas burner or over a pan on high heat, the mesh can darken (leave a burn mark). The screen's functionality is unaffected by the darkening. It's still effective at preventing splatters, and it's dishwasher safe.

Is it possible to set the screen on its hot feet directly on the counter after using it? Is the counter being burned by the hot feet?

I don't mind putting this screen on my counter. I believe the feet are not hit hard enough to cause damage.
