Product Description

By entering your model number, you can make sure that this fits.
HIGH GRADE STEEL: The Misono 440 line features a water-resistant wooden handle and high-grade molybdenum stain-resistant steel.
COMFORT: The water-resistant wood handle's curve is designed to fit comfortably in the user's hand, which makes it popular with those who prefer thinner handles.
MULTI-PURPOSE: The gyutou is a multi-purpose chef's knife that can be used to cut meat, fish, and vegetables, making it ideal for Western cuisine preparation.
QUALITY GUARANTEE: The brand's renowned thin and sharp knives are hand finished and inspected to ensure the highest quality.
SHARPNESS EXCEPTIONAL: Asymmetrical bevel with a 70:30 ratio. A thin cutting edge is created by sharpening the blade's face at a steeper angle than the back, emulating the sharpness of a traditional Japanese single edged design.

Questions & Answers

Is it possible for a man with large hands to use this handle comfortably?

No, I doubt it. best of luck!

Is there a 50/50 chance of success here?

Gyutou knives have a 70/30 bevel by default.

If we try to use aisi (US) standard or cross steel references, what kind of steel does Misono 440 series use?

I'm not sure what kind of steel was used in its construction. On a hot flat grill, I use this knife. Once a week, I sharpen my knives. I've got a couple of these. This knife is quite good.

Where did this come from?

It's made in Japan from lightweight Japanese steel that maintains its sharpness. This is a stunning blade that I strongly suggest.

Selected User Reviews For Misono 440 Molybdenum Gyutou

Overall, a good knife, but the quality for the money is questionable
3/5

Overall, I was a fan of the knife. Out of the box, it was razor sharp, well-balanced, with a nice blade shape and a clean, simple appearance. The handle had noticeable burrs where the wood parts met the metal center, which was my biggest issue. It doesn't affect function; it's just a little annoying every time you pick it up, and it's not the level of quality I'd expect at this price point, and it detracts from what is otherwise a very comfortable handle.

You'll need to sharpen this at some point, but if you can do it, it's a precision tool that's a pleasure to use

- This knife is ideal for delicate food preparation.
- Sushi rolls are cut to perfection with this knife.
- Avocados have a lot of fans. Good!
- It sharpens to a razor-sharp edge in a short amount of time. (No knife is 100% sharpen out of the box "wet stones")

This is NOT a heavy work knife at all at all at all at all at.

a razor's edge I really like this knife; it's a little lighter than I'm used to, but that's not a bad thing

Excellent knife with razor-sharp edges. I bought it for my job as a line chef at a nearby restaurant. Purchase this knife; it is well worth the money.
