Gyutou knives have a 70/30 bevel by default.
I'm not sure what kind of steel was used in its construction. On a hot flat grill, I use this knife. Once a week, I sharpen my knives. I've got a couple of these. This knife is quite good.
It's made in Japan from lightweight Japanese steel that maintains its sharpness. This is a stunning blade that I strongly suggest.

Overall, I was a fan of the knife. Out of the box, it was razor sharp, well-balanced, with a nice blade shape and a clean, simple appearance. The handle had noticeable burrs where the wood parts met the metal center, which was my biggest issue. It doesn't affect function; it's just a little annoying every time you pick it up, and it's not the level of quality I'd expect at this price point, and it detracts from what is otherwise a very comfortable handle.
