Is it necessary for the Shun label to appear on the honing steel? What makes you think it's real?

There is no indication of the label's existence. The best way to tell is to use it to sharpen a Shun knife; a fake will be too soft to be effective. Examining the handle for the unique and distinct Shun features described in the instruction videos, as well as the quality of the workmanship compared to the knives, is another option.

Is it okay to use this with the Sora?

I returned mine and purchased the Victorinox 12 inch with wood handle, which is more professional and has fantastic sharpness with just a few strokes of the regular or fine steel model. Shun makes fantastic knives for some reason, but their steel sharpeners, in my opinion, are not as good. Amazon has always been the best at accommodating me, so I'm grateful. Best of luck to you!

What's the difference between a honing steel and a wet stone for honing? Is it necessary for me to have both?

Between uses or every so often between uses, a honing steel should be used, and sharpening should be done with a wet stone. You'll need both, and they'll necessitate techniques that are quite different.

Is the handle designed to be used for honing?

The handle guard serves as an angle guide to align the knife at a 16 degree angle to the honing steel while it is standing upright on a cutting board and being drawn downward toward the board. All of the sides, both curved and flat, provide a 16 degree angle to align the knife, with the flat side keeping the honing steel from rolling when placed on a flat surface. D or modified triangle is the shape of the handle. Because a triangle does not rotate easily in the hand, this shape allows for a better grip on the handle. The steel is divided into four equal quadrants. Two of them are smooth for daily honing, while the other two are ridged for weekly honing. The different textures are 180 degrees apart, allowing for easy alignment when drawing the knife blade down the steel on both the left and right sides. I hope this clarifies some of the misunderstandings raised by the negative reviews and explains why this honing steel is an excellent match for Shun knives.

This is a topic about which I have a lot of conflicting feelings. I'm a big fan of Shun knives. The fact that there is only one guide in the handle for the 16 degree angle is nice, but I have a problem with it because I can't tell which side is "aggressive" or "smooth," and I wish it was more universal and throughout the rod. How do I get an even finish on both sides of the knife if I only use one side of the rod? I usually hone one side of the knife with one side of the knife, then switch sides on both sides, and repeat. I suppose if I turn the rod to the other side and re-align my blade perfectly, etc. , I'll be fine. a little too complicated Stop trying to complicate something that should be simple. The rod should be rough all the way around, and the handle should have two cutouts for the 16-degree angle. I hope you understand what I mean.

Yes, it's simple to use, but why isn't the blade angle on the opposite side? br>Excellent honing and sharpening. It's in a Japanese mini cleaver that my father brought back from his Korean tour. The last time it was sharpened was in 1980, and it has never been honied since. I ran it through the machine 20 times on each side with the blade angle and 10 times on the smooth side, and now I can cut paper reasonably well.

I have no complaints about the feel or appearance of the honing bar because of its high quality. To maintain a sharper edge, I like that there is a honing side and a finer honing side. If you don't know how to hold your knife at the proper angle when using the sharpener, it can be a bit difficult to use. You don't want to ruin your edge, but holding your knife at an angle that is too extreme in one direction or the other can have the opposite effect. Although I am pleased with the end result, others may not be.

Up front, I think the honing steel is good, but there are a few design flaws that make using this combo honing steel a pain. The majority of the disadvantages stem from its aligning hand guard. br>br>For starters, it has a bevel (see first image) that tells the user to align their knife there. However, if you look at the second image, you'll notice that mine, which I received from Amazon, is exactly half ribbed and half smooth. So, once you've aligned the blade, you'll need to lower it below the hilt and rotate it to center on the desired surface. You must lower it because otherwise your knife will strike the guard, which does not have a bevel. A bevel centered on a ribbed surface and another bevel for the smooth surface would have been a better design. br>br>The second issue is with the d-. handle with a unique shape I know it's more comfortable to hold, and I'm sure someone thought to themselves, "This will be great for the knives, so let's put it on the honing steel!" " Well, you should fire that guy because, from a design standpoint, it's a terrible idea because it suggests to the user that there's a preferred alignment of the steel towards your life; in fact, to use it properly, you have to bend your wrist at an awkward angle to get the surface you want (if you're letting your hand align with the handle comfortably), and you have to do the same when switching hands. The d handle isn't aligned (about 5-centimeters) in the third photo I posted. 10 degrees) with the bevel, which suggests to me that it was slapped on there without any thought to the best angle. It looks nice, but the "micro ribbing" on two sides appears to do more harm than good, but I've always touched up and sharpened with stones or leather strops, so perhaps my technique isn't great. The smooth sides are superior and appear to perform admirably. But the thing that irritates me the most is that there is an "angle guide" on one side of the bolster that is supposed to assist you in getting the correct angle, but it is not fully aligned with one of the micro-adjustments. You'd need to check your angle, then move the knife down the rod enough to rotate it about 20 degrees, and then hone. What's the point of having an angle guide if it's only on one side? I wouldn't have used the guide anyway, but the fact that it exists and appears to be misaligned irritates me greatly.

Great price and quality from a knife company that knows what they're doing! You understand the value of a good steel if you care for your knives properly. Each time you use the knife, give it a couple of licks to keep it sharp. Having said that, I've owned Henkels, Wustoff, and other brands of steel. Even when compared to others costing more than $100, this one is the best. This is the steel to get if you want a great steel at a great price. They'll also engrave initials on the hilt so you can give one as a personalized gift! (I did).
