A difference is the larger cutting area, which makes it more convenient for users who will use it all day. For casual users and users who will use it once or twice a month, the easy chopper 1 is the best option, however for everyday use, the easy chopper 2 is required

Buy it for its flavor and not for the For chopping potatoes, they sell a wall mounted unit that is much better. Onions are the one vegetable this will chop that is the most dense. For example, tomatoes, bell peppers, pickles, etc. are all great to use. In your case I would recommend the easy chopper 2, since it has a larger chopper area and so you don't have to cut the thins in half before you chop them.

Both Vollrath and Nemco make good dicers however, I prefer Nemco's more because it is taller, bigger, and more robust while Vollrath's have a bigger cutting area (5") and look more professional. It was excellent.
Once you've used a knife to dice tomatoes or onions, you'll never go back! huge bowl of pico de gallo in 1/4 the time it would have taken with a knife. It was just as good or better than what I would have made with a knife. The cilantro had to be chopped by hand and the lime had to be squeezed by hand as well.
Root vegetables, such as beets and sweet potatoes, are especially good for me. With a kitchen knife, they are always challenging to dice, and dangerous to slice, too. Last month, I cut my thumb quite severely while dicing a sweet potato with a knife and vowed to find a better way to do it. With the Nemco Easy Chopper II, the job was quickly and easily done! There are only a few things I wish I had known about In the photo (above), I am using the Nemco to peel and quarter three large sweet potatoes. They passed effortlessly through the Nemco's blades.
