This was purchased for the fire station where I work. No one has lost a finger despite the fact that we were never properly taught how to hold a knife. Which is incredible when it comes to the guys at my firehouse. The blade of the knife is extremely sharp. It's also easy to hold.
At the base, it measures just under 2 inches.
No idea. It's a high-quality knife that I adore. My previous one had a 35-year lifespan. Without a doubt. I only bought this one because it's the same as the other one, and I like it just as much. The blade on the last one I had had to be sharpened so many times that it was curved before I finally gave up and bought a new one. Buy it. You will not be sorry.

I've had this knife for three years and I still enjoy it as much as I did when I first got it. Although I am not a professional chef, I have used this knife for three years. It only takes 4 hours to prepare food for dozens of people. Cleaning, sharpening, and using it is simple. Although I own a half-dozen more expensive knives, this is the one I use the most. Upgrade from a four to a five-star rating. br>br>Original Article from January 2015: This is a spiritual successor to the Victorinox Swiss Classic from ten years ago, which is still reasonably priced but no longer offers a compelling price/performance ratio. If you buy this and an AccuSharp 001 Knife Sharpener, you'll spend around $20 and have enough knives to last a decade. I have a large collection of kitchen knives, and this is the one I take when I cook outside my home and there is a 2% chance that I will forget the knife. I'm confident that any prep work I do will be simple, that the knife will be of high quality, and that if I lose it, I won't cry. br>The handle is a little chunky for my taste, but the knife is a workhorse that will last for years of heavy use if sharpened on a regular basis. br>It's a good deal on this knife. If you're on the verge of bankruptcy but enjoy cooking, this knife will serve you just as well as a knife costing 20 times as much. br>br>8/9/2020 The knife was no longer sharpenable. I've discarded it in favor of a backup. The cost is now three times what it was when I bought it in 2015. I can understand alittle better now but 320% of the previous price? I reduced my review to 3 stars. On Alibaba, these knives are 2-for-1 in bulk. This is where Capitalism turns into Opportunism, at 3 bucks each and nearing $20 for these. This isn't the desert, and this isn't a glass of water; say no and walk away; find something under $10 that's a stamped knife with good reviews; this isn't it.
These knives are just plain effective. We've had a six-inch house utility knife for a long time, and it's seen it all. Not in the least bit kindly treated. I start with a 400 grit diamond stone and work my way up to the steel. If I'm feeling cute, I'll go with a white ceramic finish. Clean, wipe, and stick the magnet to the wall. Except for the brisket knife, I have every knife update made in this line, including the cleaver, which was fantastic on hog bone. If you're on a tight budget, I'd recommend these knives and a low-cost four-sided diamond stone. This 8-inch chef knife is more durable than Victorinox's and Mercer's 8-inch chefs knives. Knives are also excellent. However, with a full flat grind, this one could take the beating of three. Give it a shot or give someone a blade as a gift. If you can sharpen a knife, you'll have a good kitchen companion.
It keeps a razor-sharp blade and is simple to sharpen. The quality of the steel is comparable to that of more expensive knives. If you like to cook more than you like to brag about it, then this is the place for you.
The handle is comfortable in my hand, and I'm a big fan of it. I've given this product four stars because I've only recently received it. I'll give it another rating after a few weeks of use. The knife arrived quickly and was reasonably sharp; I've already sharpened it on a wet rock and it's now razor sharp. I used it to chop onions and peppers and it worked great. I'm a big guy, 6'9", and it's hard to find knives that fit in my hands. For the past 6 years, I've owned this brand of knives, and they've always held an edge well. I'm hoping this one will as well.
Sharpness lasts a long time, and resharpening is simple. I use a lot of knives and go through a lot of them. This one has stayed sharp for a long time and has a very comfortable handle. It is my worker knife, and I use it the most out of a dozen different ones.
I prefer thinner knives, but this is purely a personal preference. I have a Victorinox Chef knife that is slightly thinner than this. I like to pinch knives with my thumb and index at the base of the blade and keep the handle in the other three fingers, but the handle didn't feel right in my hand. This knife's handle felt awkward and uncomfortable because of how it was designed.
Excellent size, just a tad larger than the average. Excellent handle shape, and it sits high enough to keep your knuckles from getting busted. If you're looking for a high-quality knife with no regard for aesthetics, this is the knife for you. I have this, as well as the bread knife and the 10" chef's knife, which is my personal favorite. It's impossible to praise them highly enough.
The blade is stainless steel, and the handle is standard NSF white plastic composite. This knife has good balance and little flex, so you'll have a hard time trying to bend it.
