Exactly what I want in a paring knife a small, lightweight, and ergonomic device. You can easily peel potatoes with it since it is very sharp! It's been more than 30 years since I last used a Cutco paring knife. The document vanished (I think it may have been thrown away It would cost around $80 to replace the item. In the near future, I will not have to spend that much money on just one knife. My first tried a number of different knives, but they either weren't comfortable or weren't sharp enough (Farberware was among the worst of all the knives I tried). Keep your money in your pocket). I love this small knife because it's made of good quality steel, has a good edge from the factory, and has a better handle than my other inexpensive Update International knives are fairly good basic knives. I own a few of them and have found them good. A set of these and a knife roll will be built for my grandson who is just starting out in the food business.
