Does it have anything to do with the fact that I am using 12 vac instead of dc to drive the led?

The reason for that would be exactly that. Since the ICs inside the LED themselves require DC voltage to function properly, if the LED is operated with AC voltage, the LED will constantly "reset" from the associated wave form.

How can this bulb be wired to a 12volt landscape light?

They are wired to an outdoor transformer running on 12 volts. I haven't had any issues with them.
