I believe it evenly distributes the batter. Only one side of the waffle batter would make direct contact with the cooking surface if it didn't flip. The loose batter comes into contact with the other side when it 'flips.' I hope this helps!
The warranty is only for one year, according to the brochure. My waffle maker is by far the best I've ever had. We like it a lot.
Of course, you can make them as thin or as thick as you like by adjusting the baking powder/baking soda proportions. If you try to cram more batter in, it oozes out the sides and into the catch pan.
There's no way to get rid of it, as far as I can tell. I've been pleased with how simple it is to maintain cleanliness. After it has cooled down, I simply wipe it down with a damp cloth. The drip tray on the bottom can be removed and washed by hand or in the dishwasher.

I was very disappointed that my waffles were not the fluffy restaurant style waffles that I had hoped for when I bought this the second time. I used the Hungry Jack mix the first time, and then the Kodiak mix the second time. Waffles were not a strong suit for either of them. Then we went out and bought the Krusteaz brand, and presto! We enjoyed some delicious fluffy waffles. When I make breakfast on Saturday mornings, I no longer curse my waffle iron; instead, I enjoy it!.
