Surprisingly, the only real difference is the length. The longer knives are slightly heavier, but due to the "lever effect," the length feels different in your hand. To put it another way, the longer an item is, the more effort it will take to safely move it. Because of this, as well as the size of your hand and arm, the length of the knife is a very personal choice; I prefer the 8-inch knife because it best fits my body size for most tasks. I do have a 12" slicer that I use to carve turkeys, hams, and briskets. The 8-inch Chef's knife, on the other hand, is my favorite. Feel around a knife store for a while. them- It's not a one-size-fits-all situation when it comes to finding what feels best in your hand.

This knife set is ideal for anyone looking for a pair of sharp, practical knives. br>br>I bought these as a present for someone who had a dull set of knives. You're familiar with this type of person - To cut through carrots, a lot of force was required. I blew her away with these, which I sent her. br>br>Please note that this set is for a 6-inch chef's knife, not an 8-inch chef's knife. I was concerned that the chef's knife would be insufficiently large - Personally, I prefer an 8" blade because it's what I'm used to, but this size is fine for someone with smaller hands or who doesn't cut large items on a regular basis (large cuts of meat, large vegetables). These Wusthof Classic knives have a different handle and tang (the end of the blade just before it connects to the handle) than the Ikons. The handles on the Wusthof classics are shaped similarly to those on Henckels: They have a curve on the "butt" end of the knife that you can rest your pinky finger on to keep it from getting tired. The Ikon's handle, which is contoured gradually from the blade to the butt, with no sharp curve at the butt, is my favorite. I prefer the feel of the wood handle on the ikon to the hard plastic of the classic or henckles, but the price difference (the ikons are more expensive) is worth it. br>br>For the same sharpness as the ikon, this set of chef and paring knives is a great deal. The Wusthof classic and ikon blades are both cut at a 14 degree angle, whereas the Henckels blades are cut at a 15 degree angle (which is less sharp). After each use, wash and dry the knives by hand to ensure that they last as long as possible. br>br>These knives should be honed on a regular basis, ideally every time they are used (honing straightens/realigns the blade - Knives become duller as they are used more frequently). Sharpening the knives (removing steel material from the blade to create a new edge) should be done on a regular basis. If you use your home on a regular basis, once a year or so should suffice. br>br>Overall, I would recommend these over purchasing a larger set of less well-made knives.
This was an excellent knife until the handle snapped off. That isn't how it works. I handle my knives with extreme caution and respect. Unfortunately, it isn't very long-lasting, which is a shame because it was one of my favorites.
Now that I have them, I am able to work more quickly. I recently received my Wusthof knives and chopped bell peppers and onions with them for the first time. I'm so much faster with them than I was with my old knives; Wusthof is saving me a lot of time, and I'm actually enjoying cutting vegetables now. They've met my expectations. I prefer the 6 inch one because I can load it up with a bunch of large pieces of vegetables and chop them all at once. However, the third point is important. Also useful is a 5-inch paring knife. If anyone is wondering, they aren't hollow edge. br>I looked up the red stickers on Google because I thought they looked cheap, and it turns out they're just paper glued on the handles, so we don't have to worry about them wearing off. The blade's saying, rather than the sticker, is supposed to serve as a mark of authenticity. br>Shipping was lightning fast; I received my order three days after placing it. br>To protect my fingers and the blade, I made these knife protectors out of cardboard and duct tape.
For a reasonable price, you can get a high-quality forged knife set that comes razor-sharp right out of the box and is ideal for the home cook. You can do 75% of all kitchen tasks with these two knives. In the kitchen, I always reach for the chef knife.
This was purchased as a gift for a friend who enjoys cooking and requires high-quality knives. His mother, who worked as a chef, taught him everything he knows. He was eager to put them to good use as soon as possible. I was using the small knife while he was using the large. I cut myself by accident while wearing no pressure. I had previously purchased an 8" Wusthof chef's knife but found it to be too large for daily use. These were purchased by my husband for me. They are without a doubt the best knives I've ever had. The load is enormous. They're razor-sharp (I nicked my finger on one). I had no idea until I started bleeding that I was pregnant). These are something I use on a daily basis. It hasn't been necessary to sharpen them yet.
