Questions & Answers

Is it sharp on both sides, such that a left-handed person could use it? Is it possible for it to be used by a left-handed person?

This is only set up as a left-hander when you get it out of the box. You'll have to reset the knife to use it with your right hand. Setting the knife down and spinning it two times to the right is required for this. After that, you'll be able to use it with your right hand. If you're looking for a left-handed option, this is the one to go with. You'll have to set the knife down and spin it to the left twice more.

Is it difficult to clean the divots in the handle?

Not in the least! They are simply black in color and appear to be darker than they are. Global knives are something we adore. We have 11 knives in total, all of which are fantastic. You'll love them if you know how to sharpen them properly.

What's the angle at which you're grinding?

My eyesight isn't up to it, but Global claims that all of their knives have a 10-inch blade. The angle of grind is 15 degrees.

Is it intended for people who are left-handed? right-handed and left-handed handed? I read that the 50/50 bevel is for both, but the description states that there will be no bevel. I'm not sure what that means in terms of lefty. ?

The global knife is symmetrical from beginning to end. There won't be any issues with lefties. A Velocidad de Global Afilador gss-type edge dresser is also recommended. $17 for 01(Plata, 1), Silver Plateado. I don't think there are any knives in the world that are better than Global.

I have two of these knives, and they are fantastic knives, but one of them rusted almost as soon as I bought it. Because I don't have a dishwasher, I have to handwash everything, so I'm guessing I just got a bad one. The handle is still rust-free, but the blade and handle are both covered in rust spots and bubbles. marks that are looking br>br>I'd always wished/dreamed of being able to buy all of their knives, but after what happened, I doubt I'll ever be able to. The other one is still in perfect condition from the day I bought it, so it's possible that I just got a bad batch. They were purchased roughly one month apart.

Globalization is no longer the same as it once was

In 2017, I purchased a global chef's knife. When I realized that they weren't what they used to be, I started expanding my global knife types to include a vegetable knife ($130) and a pairing knife ($50). My vegetable knife and a brand new pairing knife both have broken tips. Because my chef's knife had lasted so long, I assumed the vegetable knife was a fluke, but when the pairing knife broke on its first use at the tip, I realized I couldn't trust the product. I've purchased this brand as gifts for friends and family. Is this a problem they're currently dealing with? I don't want to ask because it makes me feel uncomfortable.

The blade is razor-sharp, and the handle is slim

The slender handle appeals to me, and I prefer to hold it with my fingers rather than my fist. This isn't the knife for jobs that necessitate a lot of force - For those tasks, you'll need a knife with a thicker, more round handle. This is a knife for jobs that necessitate dexterity. It's ideal for hulling strawberries and other delicate tasks. br>br>I've owned other Global knives before, and I like how sharp (and narrow) the edge is and how long it lasts. It's also very easy to clean because it's made entirely of one piece with no joints or cracks.

It's a nice paring knife that's reasonably priced for a Japanese knife of its class, although I've found an even less expensive Ginsu shoku knife to be my favorite smaller jobs, there's nothing wrong with this one

Excellent, but not for everyone (due to the thin handle)

Global knives have a higher rockwell and are more prone to chipping, but they are still excellent in general. Overall, this is a laser-like cutting machine. The handle is quite thin, so keep that in mind if you're considering it. My wife likes the handle profile, but it's not my favorite; I prefer the cutting edge, as do most globals, and could use a better handle. Chipping is a possibility with any harder steel. Because of the thin nature of this blade, it poses a greater risk, and I've had to repair a couple of issues as a result of family members mishandling it. To reprofile the edges, you'll need harder diamonds, or you can hire someone to do it if you don't have the tools or experience. Overall, global knives, including this one, have a very attractive price point.

It's all about the shape

It's a lovely knife (which is why I bought it) and it's razor sharp. It is, however, extremely powerful. It's very thin, making cutting difficult. I wish it was a little more substantial - Then I'd most likely go out and buy more to complete the set. I hardly use it as is, and I will not purchase another with this design.

I like global knives, but this one isn't for me

I own a number of other Global knives, and they are my favorites in every size and function. This one, on the other hand, has a small, narrow handle that slides around in my hand unless I hold it very carefully. I was working on a head of cauliflower the first time I used it, and I was breaking off leaves from the base with the same hand that held the knife (which would have been nothing with any other knife) when it started falling through my grip, and by pure luck, I managed not to squeeze as the blade passed by- Because it's a razor-sharp little bugger, and that would have been disastrous. This is not the knife I reach for when I need a small paring knife. I'm going to throw this away after I finish writing it.

Global is definitely more expensive, but it has proven to be well worth the money; it isn't light, which is good; it has weight to it, which aids in cutting. With all the little holes, it's easy to grip; however, because it's metal, it can get a little slippery if your hands are wet. That's easy to avoid; just keep your hands dry. Overall, this is an excellent knife that cuts well and cleans up quickly.
