Perhaps the garlic I use is particularly sticky (it's organically grown in the United States), but it clings to the blade of this knife, particularly when I mince it.
Stainless steel is used to make the blade. If that's what you're looking for, the exact chemical composition (if that's what you're looking for? I'm not sure.
This Wüsthof Vegetable knife, as well as my other knives, have been sharpened by Winsteele. My sharpener is a basic hand-held model that I purchased in the sporting goods section of a local "big box" store. It works well, but I'm confident that a professional sharpener would produce a better edge.
Do you have any idea what the California Prop 65 Warning is?

Wusthof knife of very poor quality, made of cheap stamped steel. Buyer beware: this isn't a forged blade, and the handle isn't a full tang. In addition, it's very boring. The engraving quality is also poor, and it is difficult to see. br>This company, "Chefs Arsenal," does not follow through on their advertising promises. They’t make it right and will only give 20% discount and not return my full amount of money. This was supposed to be a present for someone. Because it's so cheap and poorly made, I'm too embarrassed to give it as a gift.
I can chop onions, celery, leeks, garlic, and other vegetables without them sticking to the knife blade for the first time in my 61-year life! This brings me great joy! It's razor-sharp, simple to operate, and perfectly fits my hand. It comes highly recommended from me! Yes, it is a little pricey, but you get what you pay for! I'm debating whether or not to get the chef's knife set.
I prefer to keep my station stocked and have backups on hand at all times. I was attempting to dice tomatoes with the kitchen's communal knife bucket at first. We sent it back because it lacked the heft of our other Wusthof knives. The upgraded version is $50 more, so it's a bit pricey; however, Wusthof knives are generally excellent, so we'll stick with them. Just be prepared to pay a little more for better quality.
br>Also, and this is a minor issue that has no bearing on the knife's utility, the red "W" brand on the knife's handle/grip has completely rubbed off after only about 2 months of use. It's now nothing more than a small silver square. The blade is, thankfully, branded, but it's still a pain. It's a tad sour. br>Overall, I'm not "wowed" by this knife, but I also don't see any major flaws. This blade's unique design accomplishes what it sets out to do quite well.
I have to always use dull knives because I've never been able to cut raw vegetables with ease until I found this knife, which is lighter weight than other, more expensive knives I have, so I'm hoping it'll last a long time.
This knife is absolutely incredible. It's my favorite knife for preparing fruits and vegetables because it's light but powerful, easy to use, and comfortable in my hand. Peel gets stuck on the other side of the blade with a regular knife, but it just slides off with this one! It was a good investment.
This knife's premise is fantastic, but it lost its sharpness shortly after the return period ended. I expected more from Wusthof, especially for the price, and I was disappointed with this knife. I can put it to a stone, but I expected more from Wusthof, especially for the price!.
