This vegetable knife was razor-sharp right out of the package. It's not difficult to cut through magazine paper. X50CrMoV15 is the steel used. Wusthof and Zwilling both use essentially the same steel. It isn't a super steel, but it is a good steel that doesn't require any special care. The edge can be brought back to o with a few swipes of the honing steel and leather strop. a sense of clarity br>Instead of using the dishwasher, hand wash the knife, but don't wipe it down while using it. br>The cutting edge measures 6 3/4" in length. At the heel/chin of the blade, it stands 2 1/2" tall. At the blade's tip, it narrows to 2". The handle measures 4 inches in length. In terms of handling and function, this is essentially a tall nakiri or small cleaver. I'm glad I made the purchase.
"Sam The Cooking Guy Knife" now has a "stamped" counterpart. I'm not sure what happened to Sam on TV, but this knife is fantastic. It's less heavy than the forged knife, as one might expect. It doesn't mention Sam, but I'm sure it's the same knife as the one associated with "Sam. " It has a full tang, a POM handle, and impeccable craftsmanship.
This is a fantastic blade.
