I'm not a professional by any stretch of the imagination. We sharpen this knife once a month because we use it so much. A manual diamond hone sharpener from Edgecraft is what we use. We're good to go with just a few passes through the coarser step 1 and finer step 2 sides. The knife has a razor edge when it arrives, but we haven't kept it that sharp in our home kitchen. No, it's not the case. Their product documentation specifies that it should only be washed by hand. The blade would be quickly damaged or dulled by bouncing around in the washer against the rack or other cutlery. If you don't mind losing your edge or having to re-adjust your strategy on a regular basis, I suppose sharpening is one thing, but getting a no-name knife from the grocery store will save you a lot of money.
