The Kasumi 7-inch Japanese vegetable knife is made for quickly chopping up vegetables.

The Damascus pattern is both attractive and rust-free.

Both sides of the edge are beveled, but the bevel on this brand is much larger than that of a European or American brand, resulting in a sharper edge.

The asymmetrical handle is riveted to the full tang of the knife and is made of multiple layers of wood impregnated with plastic resin.

I had a few Kasumi knives that I bought in France a few years ago and was very happy with the sharpness and ease of use. On Amazon, I came across this vegetable cutting knife and decided to buy it. It's a fantastic addition to my library. Yes, it is pricey. It will, however, be remembered for a very long time.
