Mine is ten inches long overall, with a six-inch cutting section. This knife is one of my favorites, and if you're a serious cook, you'll love it too!
I simply use soap and water to clean my. Because it's all stainless steel and there's no wood handle, I don't see why you couldn't put it in the dishwasher. It's something I'd consider including. I hope this has been of assistance.

br>And now I'm curious: What was I thinking waiting so long? It's as close to being the Perfect Knife as you can get. br>The super light weight reduces fatigue. br>The clarity is incredible (though only time will tell how long it will last). br>The only minor flaw is that the handle is a little short, possibly to accommodate smaller hands.
sharp as a tackbr>- Cutting is easier (depending on what you're doing, of course) with a thin and fluted Japanese style blade. br>- all- The stainless steel construction is hygienic and clean. br>- global-exclusive The style handle is both grippy and comfortable to hold. br>- This is the knife I'd choose if I only had one (I prefer this shape to the Western chef or Santoku styles).
New adjectives to describe sharpness are required because of these knives. Words like "extremely" and "razor" don't seem to be cutting it (pardon the pun). While I haven't been as impressed with the quality of some of Global's utensils (the Princet Utility tongs, which I gave a 3-star rating), I have been impressed with the price. I'm not a chef, but I've collected knives of almost every type for 30 years and know what I'm talking about when it comes to quality (the $120 carving fork and $180 ceramic sharpening rod). In my kitchen, this is without a doubt the most used knife.
Sharp, light-weight, and spotless.
The knife is excellent, and it arrived promptly.
Size, weight, and balance are all just right. Keeps a razor-sharp edge.
gift.
If you like sharp knives, this is a good place to start. the knife comes very sharp, and after hitting it with my japanese whetstones, I was able to shave my face dry with it (sounds scary!).
