It is dependent on the level of abuse. I'm a farmer/chef who uses this knife in the kitchen and on the farm to harvest vegetables. This knife comes out of the box sharp as a razor blade, and a few swipes across my whetstone on a regular basis have kept it in near-perfect condition. Dexter knives are made for everyday use and can keep a sharp edge for a long time. The longevity of a knife's sharpness is entirely dependent on how well it is maintained over time.
I'm not sure what the rating is. However, I use this knife on a daily basis to inspect produce at a major grocery chain distribution center, and it's the best tool for cutting hard potatoes and sweet potatoes.
I'm not sure what the rating is. As a grocery distribution center inspector, however, I use this knife every day to cut potatoes and sweet potatoes. It slices through hard new potatoes like butter and maintains an edge for an extended period of time.

Great for rubber "Aeroflex" installation. They stay mighty sharp, and I still have to sharpen them 3 to 4 times a day. Dextar knives are without a doubt the best in the business. I have four different dextar knives at the moment. I've tried a lot of different things and none of them have failed me.
Cutting knives for produce that are excellent. I used to work at a grocery store, and we were given these knives for free. br> I ended up buying a few for personal use because they're so sturdy and sharp. The only disadvantage is if you use it frequently. They get a little boring after a while, especially for the price of a single. This could be construed as a drawback.
I bought two of these knives and plan to buy more and recommend them to anyone who asks.
