Radicchio is now one of my favorite vegetables. Whenever I purchase a head of lettuce, I remove the outer leaf (if it has begun to wilt), thoroughly dry it, and wrap it in a dry paper towel before repackaging it in the plastic bag and storing it in my crisper. Radicchio, unlike other leafy greens, can be stored in the refrigerator for up to a week.
This radicchio appealed to me because of its freshness and crispness. Puglia is the Achilles' tendon, if Italy is shaped like a leg and a boot. On the Adriatic, the lower back section.
