As a young adult, I was diagnosed with type 1 diabetes after eating a lot of wheat pasta, and what I can tell you is that this stuff when cooked properly has a far better glycemic index (for me) than any wheat pasta I have ever eaten. It is literally impossible for me to consume carbohydrates without monitoring them constantly. Although I agree that their early claims were false, I fully understand their reasoning. The fact that I, along with others, are able to eat something that would otherwise be off-limits does not diminish the fact that it allows me to eat some foods that are otherwise off-limits.
There is also a serving size of 2oz printed on the box that says, "Total Carbohydrate 41g". The caveat emptor rule applies!

In spite of the fact that I have type two diabetes under control for the most part without insulin, I do keep an eye on my blood glucose levels. My family loves pasta, and I had a discovery long ago that Dreamfield Pasta does not spike my blood sugar as Ronzoni or Barilla do. Although I still eat pasta occasionally, it is less than what it used to be. I can tailor this diet to fit my needs exactly. It does make a difference without sacrificing taste or texture, but I don't overdo it.
Unlike plain pasta, this pasta is just a little bit thicker and doesn't spike blood sugar to the same extent as regular pasta does. I love getting a little more fiber without even realizing that I am doing it. This is hard to find without going to a gourmet grocery store, so we appreciate the fact that you can find it on Amazon for a great.
So I checked the box and reported there was nothing on it. On the nutrition information box, you will see that there are 41g carbs. My research on the internet revealed that carbs were not undigestible, so the claims about undigestible carbs are spurious. It was earlier this year that Dreamfields settled a class action lawsuit in the matter. My mind is not entirely at ease that this happened months ago and I was not aware Unbeknownst to me, the news story completely slipped my radar. In other words, it was "underreported," as those marketing gurus would put it. It's not recommended that you consume this if you're trying to follow the Atkins diet.
There was a spill of pasta when the product was opened. As an open product it cannot be used since it is unsanitary.
I am Italian and diabetic, so I am very glad to find this because it is as good as any I have found in the market and the carbs break down at a slower rate.
I got ten boxes of spaghetti when I made the first order. It was an order A replacement was sent and Linguini was delivered, but the boxes were nearly all damaged. We will never repeat that mistake. THIS PRODUCT IS NOT AVAILABLE FOR ORDER. Having been warned, you should proceed with caution.
I consider this the best tasting low carb pasta I have ever eaten. Although it is a little expensive compared to other low carb products, it is not for lack of quality.
As good as the Italian imports in terms of flavor and texture. It is wonderful to have the ability to eat normal portions without causing my glucose to rise.
