It has been my go-to pasta for years to find Garofalo Gluten Free GF pasta is the only brand that I will buy. I have served it to people who did not even know it was gluten free. Due to some reason, Garofalo has switched from white rice to brown rice in their blend, a noticeable change that is seen in the darker color of their pasta and when comparing an old package to their new one This requires an additional 12 minutes of cooking time (depending on the style of pasta you is cooking) as opposed to 8 minutes when using original gluten free It's always a struggle to find brown rice GF pasta blends, because they tend to get mushy (noticeable when strained) and taste horrible. The situation is borderline in this area right now for Garofalo. The Garofalo pasta had a great product before this change, and now that it's been changed, I would consider it a bit better than the rest. Also note that the weight of the pasta packages has decreased to 12 ounces. There is certainly some truth to the old saying "If it ain't broke, don't fix it. ". How and why did Garofalo get to be so famous?.
