In my search for a retailer in metro Portland, OR that stocked "pickling lime," I found it incredibly frustrating, so I turned to Amazon, where I was astounded to learn that this seemingly ordinary chemistry was so expensive. Food- In today's industrialized economy, grade is no longer a mystery when it comes to ingredient processing. This, on the other hand, appears to be a deep gouge. The product's quality appears to be satisfactory. However, without the use of equipment to determine the purity of the contents, one is limited to their eyesight, intuition, and trust. Given that I'm new to pickling, I wish I had done more research before purchasing this product because I discovered that calcium chloride (CaCl2) is suitable and far less expensive. It's all about living and learning.
