Ms. Ryan, I'd like to extend a warm welcome to you. I've never used pickling lime to make homemade noodles, but there is a Glucomannan Flour available at some health food stores that can be used in the same way. I simply crack an egg into mine and continue watching. This year, I made my homemade pickles with Mrs. Wages Pickle Mix, Xtra Crunch, because I had a surplus of cucumbers that needed some crunch. I was a little wary of the Calcium Chloride in Mrs. Wages Pickle Mix (only because it's used to de-acidify the pickles). I was hesitant to use it in my cucumbers for added crunch because of the ice roads in the winter, but it worked fine. I've been using this product in multiple batches of pickled cabbage, sweet peppers, pickled onions, sweet bread, and more for several months now. Red hot cinnamon pickles, butter, kosher dill, polish dill, and kosher dill All of the canned vegetables produced excellent results in terms of crispness and flavor. When used as directed, the product does not add extra saltiness or change the flavor. Crispiness in any pickle or pickled vegetable requires only a small amount.
Well, the 5 batches of pickles I made weren't as crunchy as they used to be, so I looked for a solution and found this product. WOW. Ms. Wages could have informed us that the crunch had been removed, and I would not have spent the entire time preparing pickles without it. Mrs. Wages is currently disappointing me. However, you can now purchase ANOTHER item, which I will use to make CRUNCHY pickles!.
I read somewhere that if you're going to use this product, you should do so in pints rather than larger jars. That was the path I took. I've also noticed that it's used in commercially canned tomatoes, so I believe it's safe for home canning. It's possible that it'll take the place of alum. I'll be using it from now on!.
When I noticed the extra crunch, I decided to assist my wife in the pickling process. Husbands should stay out of their wives' affairs. This product must be used with one of two Mrs Wages packaged pickling mixes; it will not substitute for regular pickling lime, and it is not necessary unless you are using one of the two packaged pickling mixes. When my wife contacted the company, she was told that this should not be used in place of pickling lime. Oh well.

Now, my canning group has warned me that unless I add herbs or this, the pickles will often come out soft. I bought this and added it to my pickles, which turned out to be incredibly crunchy when they were finished processing. I think this stuff is fantastic, and I've been using it on my bread and butter pickles since then. And because each jar only requires a small amount, it will last me a long time.
This container will last a long time because only a small amount is required per jar. I wish I had known about this product years ago.
After our garden produced an abundance of jalapeos, we used it to pickle them in glass mason jars, and it turned out beautifully.
