It should work as long as the chilis are fermented. To keep the vegetables crisp, I believe the product should have the same qualities as 'tannen,' which is used in fermented pickle making. It works well when combined with cucumbers to make garlic dill. Good luck, it sounds like you have a promising future ahead of you.

My half-sour dill pickles remained crisp and tasty as a result of this. The right proportion of salt and water for the brine is critical, but this product's crisping action is an added bonus. Ball is less expensive than an Amazon-sold product that contains the same ingredient. I ordered both, but the Ball was the first to arrive, and it was successful. It's something I'd order again if the opportunity presented itself. Yum, half-sour dill pickles, just like the ones from the lower east side of New York City; I hope they're still available, but things change.
I recently processed pickles with this product for the first time. When we open the pickles later this year, we'll have to see if it actually works.
