In order to make gluten free pie crust without having the crust cook up too hard or crunchy, I read that it was necessary to add some garbanzo flour to the dough. This "fix" worked for me and my pie crust was flakey and delicious!!.

It is a wonderful flour for making polenta. I use it to make Italian style polenta. The polenta was delicious, and I used some of it right away. I appreciate it.
