It goes well with any Paleo recipe. It's great on bananas or other fruits.
Given that most baking recipes call for some sort of sweetener, I'd assume it's a matter of personal preference. Unsweetened shredded coconut is the only kind I use. It's more adaptable, and I can control the amount and type of sweetener I use in any recipe.
It does state that it is gluten-free on the front of the package. It never gives me any problems after I eat it.
There was no mention of the coconut being bleached on the package.

I was very upset at first. I was disappointed in myself; I ordered shredded coconut instead of coconut FLAKES by mistake. “Ugh! It is unappealing, hard, and lacking in sweetness. I have no idea what I'm going to do with it. I'm afraid I'll ruin my favorite macaron cake by using it. I'm used to shredded coconut that's a little coarser. It's in a recipe for protein bites that I use. It won't work in the recipe because it's so finely shredded. Because the consistency was off, I had to use more than the recipe called for, as well as more oats. It's fine as a garnish or on the outside of a truffle, but if you're used to shredded coconut that's coarse, this isn't for you.
