I received 12 in the package I ordered. When you receive them, make sure the foil seal is intact. All of them were still sealed, but I rebagged the ones that were flimsy before freezing them.
Yes, you can eat it. After opening, keep refrigerated or frozen. Just like canned chile, these have a fresh flavor. However, they are not as good as canned ones.

Green Chili, a wonder regional delicacy known primarily to Colorado and New Mexico, is something I grew up eating in Colorado. The recipe calls for roasted green chilis, but if you can't find authentic ones, don't use them. It's not the same as what's grown in the Hach Valley of New Mexico. I've lived in New England for over a decade and have had to make do with roasting whatever chilis I could find (Poblanos, Jalapenos, Anaheims), occasionally using canned Old El Paso roasted chilis, but something didn't feel quite right. During a recent trip to Colorado, I decided to dig a little deeper to see if I could find the real deal at one of my favorite Mexican restaurants. That's how I came across these Amazon gems! Hach valley, freshly roasted green chilis, slightly smoky, authentically and uniquely delicious! Also, given how much you get, this isn't a bad price! They are fresh roasted, not canned, and are packaged in individual plastic containers with a date on them. They're the closest I've come to getting the real thing, fresh out of a roaster, spinning over an open flame in North Denver. Bummer - I have this on auto-delivery because I am desperate for green chile. My last two orders were sad, so they must have changed the packaging. Half of the containers had broken seals, resulting in green chile all over the place.

When I lived in New Mexico, I was smitten with Hatch chiles. It makes no difference whether the color is green or red. Flavors are difficult to describe, but they will change your taste buds forever. If you're unfamiliar with the flavor of these chiles, start with the mildest and work your way up to the hottest.
I ordered green chile from El Pinto and was pleasantly surprised by how delicious it was. When I'm finished with this batch, I'll order more.
