Is it possible to use this instead of a scsi? 3 high-definition 68mm cables?

Yes, this is a HD68 pin male to male cable, and it should work for you; however, don't confuse it with LVD, which I believe is a similar-looking 80 pin connector, or the smaller HD50 pin connector.
