Yes, but watercolor works best on white paper and looks the best. On grey, it looks a little strange. But do what you want.
Yeah. Simply place a book or something between the pages to prevent the liquid from leaking through to the blank art pages.
Charcoal and pastels look great on toned paper. I experimented with pencil but was unsatisfied with the result. The image is disappointing, so I wouldn't use it for colored pencil or graphite.
This paper does not contain any acids.

Colored pencils, pencils, and markers all glide over it with ease. If you've never tried drawing on toned sketch paper, I highly recommend it; it's all I've been using for months.
This paper is fantastic for a beginner like me. The white literally pops out of the paper, as you can see in the photos. Everything you draw will appear to be extremely realistic, which is fantastic for beginners. I got the larger notebook because I like to do a lot of drawings on a single page. This notebook is also great if you like to do large drawings. The paper is nice in and of itself. It's a little thin, but that's not a problem because it won't tear. This is an excellent choice for both beginners and experts.
These books are fantastic. They have a pleasant organic medium gray tone that is ideal for black and white color pencil sketches. I frequently bring these to conventions and draw on them while I'm there.
Although the paper is a little rough, it is still ideal for sketching. This paper was purchased specifically to test out the 9XXB pencil and the Charcoal White pencil, both of which I purchased from Amazon. I've attached two quick sketches for your consideration. To smooth out the pencil work, I didn't use any stumps.
I own both the tan and gray sketch pads, but I prefer the gray. br>For the eyes, I used compressed charcoal in white and black, as well as conte crayon in black and white. This paper, Strathmore 9x12 gray, is what I used.
In my drawings, I like to try out different types of paper, and I have to say, I'm a big fan of this one. It has a great thickness and a great texture that can hold a lot of color while still allowing for smooth blending. The size is ideal, with plenty of room for large items while still fitting easily into a larger bag. This sketchbook, I believe, provides an excellent balance of quality and quantity for the price. I'm not sure how well it'll work with paints or other similar mediums, but it's great with ink pens, colored pencils, graphite, and charcoal!.
It's worth noting that about a third of the paper is made from recycled materials. The paper has a delicate feel to it, and the media on the page has little tooth. The paper has a flimsiness or softness to it, as if it were made for drawing and erasing rather than providing a solid, long-lasting foundation.
Pencils are excellent for this task. My only gripe is that I did not purchase the entire set of 150. Prismacolor has always been a favorite of mine. If you're anything like me, you'll want to stock up on white pencils. They're going to come in handy.
