I've never cooked ribs before, but they shouldn't fall off the hook if you keep an eye on them as they near completion. br>Instead of relying on the built-in gauge, invest in a wireless temperature probe to keep a close eye on the temperature of the smoker! Once it reaches a stable temperature, the smoker maintains a fairly uniform temperature, so the ribs closest to the coals should not burn! Even though a sausage was touching the drip tray, it did not burn!
If you have the 22" WSM, however, it fits perfectly on top of the barrel.

This is the hanger I've been using for my 18-year-old. I've had a 5" WSM for about 6 months now, so it's not something I'm unfamiliar with. One, the three spoke hanger is not attached to the base, and I have knocked it loose while loading and unloading my ribs, resulting in it falling into the fire. Fix? I tied it together with wire to keep it from moving or falling (which worked). Second, there is an issue with consistency. The entire hanger can tip if your hanging ribs accidentally shift off center, and your ribs will end up in the bottom of the smoker, according to Not Good Eats. This has happened to me multiple times, which is why I'm writing this review. Last night, as I was removing a beautiful rack of beef back ribs from the grill, it fell into the charcoal. I regret to inform you that I do not recommend purchasing this item.

This is a very nice rib hanger. Because there is so much space, I usually have to split my cooks into two sessions and use a different type of rib hanger. I can now cook all of the meat in a single pot. It helps you save time and money by reducing the amount of time and gas you use. It has a high-quality metal appearance and feel to it. Welds are also very clean and complete. This was money well spent. I haven't had any complaints after a few cooks. This is the rib hanger that I use most often.
