I'm having trouble slicing the bread; does anyone have any tips?

It's worth investing in a good bread knife. I purchased a Tojiro 235mm F-Style Bread Slicer. 737 Warm or cold, hard crust or soft crust, it slices cleanly and easily through almost anything. I tried using a bread slicing guide, but I found that a little practice with my Tojiro knife produces results that are just as good as or better than the guide, so I no longer use it.

I'm debating whether to get the mini or the regular Zo because I'd like to use this machine to rise dough as well. Is it big enough, in your opinion?

It depends on the recipe; I purchased "bread machine magic" because it contains all of the recipes for small, medium, and large bread machines, and I use all of the small recipes, which include dough recipes. I once tried a kolache recipe on the dough cycle that was clearly a 1 1/2 to 2 pound recipe and it had trouble kneading it, so I had to transfer it to my kitchen aid mixer for the first 20 minute kneading cycle, then I put it back in the zo because it has the temp control for rising. The dough was pliable at that point, so it had no trouble kneading the second time. You can't program the machine, so if you knead the dough and then put it in the machine, you'll have to wait for it to finish, but there's a timed chart so you know when everything happens. Anyway, if you stick to 1 pound recipes, you'll be able to make just about any type of dough.

Have you ever had a problem with a crust that was overbaked?

Our Mini Zo has only been with us for a couple of days. I baked three loaves the day before yesterday. The first loaf was made using the "basic" and "regular" settings. The interior of the loaf was light and fluffy, but the crust was extremely crispy (which made slicing difficult). The second loaf was a cheese and onion basic with a light crust to which 1 1/2 tablespoons drained, chopped, pickled jalapeos were added. Cheese, onions, and jalapeos were strewn all over the bread pan, the crust was VERY dark, and when sliced, all of the add-ins were in the bottom third of the loaf, indicating a poor mixing job! Yorkshire Spice Bread was the third loaf, and the settings were "soft" with "light crust" from Norman Garrett's "Quick and Delicious Bread Machine Recipes." Except for the VERY dark crust, it turned out quite well; I wanted to be able to'set and forget' this machine for overnight baking of basic loaves at least occasionally, so setting a timer to remove the loaf early is not a practical solution for me. I'm amazed at all of the positive reviews for this machine (I did my homework) when it can't seem to make a loaf with a decent crust, and I'm so disappointed in it that I'm hoping Amazon will accept it back.

Is there a hole in the bottom of the loaf as a result of this, or does the blade retract before baking?

Yes, if you bake with the machine, the bread will have a hole in it. Because this machine bakes a small loaf of bread, which has a hole in the bottom and is shaped like a chimney if baked in it, I prefer to leave everything else to the machine. After the ingredients have been mixed, I take the dough out, shape it, and bake it myself in the oven for aesthetic reasons. Regardless of how you prepare it, the taste will be fantastic.

Every week, I use it to bake a loaf of fresh bread. I've improvised all kinds of bread that suit my fancy, relying on the basic recipes included with the book: red bean and matcha are two ingredients that can be combined to create a delicious dish. walnut and sesame; dried fruits of various kinds (e. g. raisins, figs, figs, figs , dates, plums, mango, raspberries, blueberries, ginger, orange peels) and nuts (e. g. , dark cherries, dates, plums, mango, raspberry, blueberry, ginger, orange peels) walnuts, pecans, and pistachios, to name a few). They're all favorites of mine and my husband. I also use the jam function to help preserve fresh fruits on the verge of spoiling. They're a big hit with homemade yogurts, bread jams, and ice cream. I was looking to see if there were any newer models because the nonstick basket was beginning to show signs of wear. Then it occurred to me that I had it for five years. With consistent use of 2- This breadmaker's quality has been outstanding for the past five years, having been used three times per week. br>br>07/04/2020 UPDATED: I bought a replacement blade from the Zojirushi website, and the bread maker has been working perfectly since then. This bread maker has been used on a weekly basis for the past seven years. It's impossible to express how much we enjoy it during COVID. Pandemic number 19 has arrived. By the way, if you like to mix all kinds of goodies into your bread like I do, I recommend taking the dough out after the mix cycle to mix it or using a spatula to squeeze the goodies into the dough while it's mixing. Minced ham and cheese is one of my most recent favorites. I roll out the dough, stretch it flat, and top it with ham and chunky cheese. Roll them up again and place them in the bread maker for the remainder of the cycle. br>br>10/26/2020 Update: I believe it is time to retire this small bread machine, as the center of the bread near the top of the loaf is occasionally not cooked through. Maybe the coil doesn't heat up as well as it used to after 7 years of heavy use (or maybe I was just too greedy in getting the tallest 1lb bread I could find - I'm not sure if it's because there's too much flour or because there's too much yeast I'm going to get the other Zojirushi 1 pound breadmaker, model BB-100. SSC10 can be used as a stand-in. My observations will be reported on later. For now, here are a couple of my favorite add-in mixtures to the basic milk/honey bread, for those of you looking for interesting recipes: br>br> (1) candied orange peels, cranberries, and walnuts (along with a few drizzles of orange extracts), (2) mashed sweet potato and walnuts or pecans (reduce the amount of flour), (3) diced ham and cheese, and (4) matcha powder (mixed with flour) and Morinaga Ogura An (Sweetened Red Beans). I don't use the cake function nearly enough, but banana and walnut bread/cake is a favorite whenever I need to get rid of bananas. br>br>5/16/2021 Update: I'm going to leave my comparisons with the Zojirushi BB-100 to the end. Here's where you'll find the SSC10 Maestro Home Bakery Breadmaker. Overall, I prefer the Maestro's bread because it's fluffier, moister, and tender. I also like the countdown feature, which lets me know when the bread will be ready at a specific time. Depending on the bread I'm making, I may add a few drops of flavoring (e. g. , vanilla extract). , orange, coconuts, maple syrup, or rum) at the start to give the bread a richer flavor. br>br>The automatic ingredient drop is less useful because I usually add a lot more ingredients to my bread. As a result, I usually leave it running until the kneading cycle is complete after the dropbox has been opened. Then I take the bread out of the breadmaker, stretch it out into a rectangle sheet, arrange all of the nuts and treats on top, roll it up, and secure the two ends to the bottom before putting it back in. This ensures that the nuts and treats are distributed evenly and that they are not broken. (I've included a picture of a marble chocolate bread I made to demonstrate how the final product might look. ) br>br>In conclusion, if money isn't an issue, I'd recommend the BB-. SSC10. However, if you're looking for a reliable bread machine, look no further than the BB- For the past seven years, the HAC10 has proven to be a dependable machine that has made our family very happy. I don't believe either of them will disappoint you.

I baked twenty loaves and only one of them was successful! At least twenty loaves of bread were baked by me

None of them were successful. I changed flour types, yeast types, and followed every instruction in the manual. As suggested, I weighed the ingredients. I experimented with various options. The worse the bread got, it seemed, the more I tried. I finally contacted the company and sent the machine to them, and here is a picture of my most recent effort. They claimed that nothing was wrong, and that they baked a bread on the regular cycle (as I did), but that they weighed all of the ingredients (as I did) and got a fine bread (as I did not). My bread machine will be returned to me for $38. I told them to put it out of their minds. By the way, I also bought the four-year warranty, which was a joke since this is still supposed to be covered by the manufacturer's warranty. I'm just out of luck because the company claims that their product is fine. You won't be out of luck if you don't take precautions. This bread maker should not be purchased.

I've had this for a few months and have baked a number of loaves with it. In general, I enjoy it and use it frequently. Just a few things to keep in mind: br>1) The small bread machine is ideal for a kitchen with limited space. It takes up very little space on the counter, so I leave it there all the time. The disadvantage is that it only yields a small loaf of bread. That didn't seem to be an issue for me because I cook for myself. However, I enjoy the taste of fresh bread so much that I frequently consume one or two small loaves per day. A larger machine may be preferable if you have the space, but if you don't, this one will suffice. Even so, loading and starting the machine takes no more than 5 minutes (and cooking takes 3 1/2 hours). )br>2) I discovered the newer, more expensive version after placing my order. It has a lot of pre-programmed options for making various types of bread (no salt, gluten free, etc. ) but I've found that with a little experimentation, I can make any variation I want with this machine, and I'm glad I bought it instead of the other. br>3) To get a great loaf and one that suits your taste, you'll need to experiment with recipes; the recipes in the manual are just a starting point. Try new things! br>4) When I'm kneading, my machine makes a slight squeak. It isn't in the pan or paddle, which spins silently and smoothly. It has to be something to do with the internal mechanics. It doesn't sound like it'll break, but it does sound a little irritating. Hopefully, it will not be the case with yours. br>5) Use extra gluten and yeast that rises quickly. Make yourself comfortable with them. Also, try out some herbal combinations: Dill, parsley, and caraway are some of my go-to herbs.

A Simple- I've made four loaves with the Lightweight Small Loaf Quiet Machine since it arrived

Everything has gone smoothly, including a two-hour rye. There were two delicious buttermilk loaves. One wheat in particular that I think is my favorite, and the accompanying book makes it very simple to grow. Simply follow the directions, use the exact amounts, make sure they're in the correct order, place the yeast in a small indentation so it doesn't get too close to the liquid before it starts kneading, and hit the start button. Perfect size for the two of us, light and easy to store with a handle, and the cord wrap is an added bonus. Oh, and don't forget that this is a whisper-quiet machine; I have no idea it's on until it beeps to tell me it's time to add nuts or raisins, or that it's finished and the bread is ready. The bread loaf falls out easily when I turn it over. The blade has made a small hole in the bottom. Cleaning up is simple, but make sure you follow the instructions. br>br>Recent changes: br>br> There are a total of 25 loaves in a wide range of flavors. This machine is flawless in every way.

Is it defective? I believe our machine is defective because we followed the directions exactly four times (with different recipes each time!) and got the same results - The bottom of the loaf has a 3 inch diameter hole from the paddle, with dry powder on top and hard as rock bread on the bottom
