I use this knife daily in my prep and on the line. There are just so many things I can do with this knife. Even though it's called a "light slicer," this knife is just as effective with fruits and vegetables as it is with meat. It wasn't long after I pulled this knife out that I knew it was going in my collection. I've dealt with more knives than I would like to mention over the last 15 years as a chef and a knife enthusiast and this Zhen knife comes out on top of all the others As a professional chef, I have had the honor of using many different brands of kitchen knives---anything from Shun, Henckels, Wusthof, Global, Zwilling, Porsche, etc. This knife delivers unparalleled quality for the price. The knife is just as good as or even better than a Shun knife at half the price.
Pertaining to the manufacturing of the knife, everything is absolutely perfect. Even after mixing a salad with its oily dressing, the knife never once slipped out of my hand. Straight out of the box, the knife is razor sharp. There is nothing to be done with this knife, but most knives, even those marketed as professional ones, require a quick hone prior to use. Having a smaller blade grinding angle provides a much more sharp result, which is after all, what the typical cook is looking for in a knife.
Due to the width of cleaver type knives, food tends to stick on the blade. Using the rubber handle on a regular basis will cause it to deteriorate. I contacted the manufacture and was told it was the user's fault for the defect on the rubber handle. I asked for a replacement kit, but no such option was available. It does not provide good customer service. As it was advertised as "Japanese", I brought it with me. A product that was forged, but with a rubber handle that was inferior and high prices failed to reach success. In most cases, you will find brands with wooden handles of similar grade to this one that will outperform it on the whole. You should be careful when buying.

This knife is not a cleaver, let me state that first. It's possible that you didn't read or didn't know what you were purchasing if you bought it thinking it was a cleaver for cutting meat. The knife I'm holding is a Japanese vegetable/chopping knife. All in all, it's a good knife for its type. from what I can tell, it's got a full tang and is very comfortable in the hand. Rubber handles are very appealing to me. Those are the knives I prefer to use over others in which the wood is sealed with oil or a sealant to keep them from cracking when washed (I hand wash them. ) Other similar knives are more long, though, and I think that I prefer that. Compared to the previous one, this one is also shorter and doesn't seem to have as fast of a rocking chop as the previous one. To lift it higher, you need to lift it However, this is no big deal. As with all knives that come from the manufacturer, this knife arrived VERY sharp and has generally kept its edge with daily use. Just a little honing with a white ceramic is all that is required to remove the burr and restore it to its original state. It's likely that stropping would work as well. The cutting board has to be plastic or wood, and I have to keep a blade protector on it when I store it in a I'm on the frosted surface now. Food still sticks to it, though. There are no tomatoes, potatoes, onions, or celery that will stay on the pan. This is more of a gimmick than anything else. It's none of your business- It is not much of a deal breaker, but it is not a selling point either. The knife's teeth come out extremely sharp out of the box, the form factor is exactly what I like for cutting vegetables, and the handle feels great in my hand. I was under the impression that the stripe on the blade was the shadow of a bezel, not a sandblasted area that feels fuzzy. In my opinion, this is "frost finish," which is supposed to prevent sticking, which current first- and second-round reviewers say is a huge waste of time. Due to the pitted surface harboring bacteria, it marries the beauty of a beautiful knife. Additionally, it turns me off from cutting meat due to the unpleasant odor it would emanate. All things considered, I find it to be incredibly stupid. To improve aerodynamics, it is like getting a brand new car and sticking some wood grain wallpaper on the side. Since it offended me so much, I returned the knife. I went with Zhen over the other brands with the same shape due to its good fakespot rating, unlike those that rank C or less (which means they have fake reviews and you should deduct two or more stars from their ratings). The full tang version of the full tang version of this with rivets in the handle seemed to be out of stock for awhile, but I then did some research and found it could be However, I would have been just as disappointed and returned it since it had the same racing stripe.
