This does qualify as a full-time job Metal is one piece sandwiched by wood at the end of the handle to form a tang cleaver. Old Hickorys will rust if not dried off and oiled after washing like all of their counterparts. In all, we own about ten Old Hickory knives (some have been with us for almost 30 years), and for the money, they are some of the best knives we've ever had. The one you buy will not let you down.

Does the spine (as well as the blade) have a hardened surface?

That seems to be the case. It has been 42 years since I bought one set of these knives and they are still my go-to

When it comes to bigger pork bones, how does this cleaver do? Do you think this is ?

A good size kitchen clever, but not the strongest. If you need to cut large bones (bones as big as a hand), a heavy-duty clever should be preferable. However, if you need to split chicken ribs or pork ribs this is excellent. The edge of this board has a slight radius , therefore the board is not flat. The one I have is great for what I need and I use it frequently.

As the head butcher at a butcher shop in Boston, I am struck by how Ontario likes to make knives as small as a pen. Its true that this cleaver is fairly rugged and made from a decently good steel, but it is almost too small for its purpose! weight and bulk to cut through tougher materials, if I weren't going to need a considerable amount of mass to cut through my material, then I would reach for a regular knife to accomplish what I need to do. I feel it important to put this in perspective, as my Dexter cleaver weighs almost 20 times what this little thing does. It is true that the Dexter is a little too heavy, but to compare it to a real oven is like comparing an easy bake oven to a real oven and expecting them to be able to do the same thing. Although it does a good job of hacking up leftover turkey from thanksgiving, I have no idea who this thing is intended for. It does a decent job of cutting chicken for curry as well, but beyond that, I am hard pressed Those lamb loin chops, composed of 90% cartilage, will also not be able to pass through. It might be better if the thing was stretched in both directions by an inch or two, or maybe if the steel were 50 % thicker, and there would be a cleaver I would reach for instead of laughing It would be hilarious as a movie prop even if it were as it is.

I was very satisfied with the shipping and service. This knife is top notch and should have a place in any kitchen without a doubt! A carbon steel knife may be protected from rust by vinegar, whether it is hot or not (hot speeds up the process). Another reviewer mentioned that vinegar may help preserve carbon steel knives by giving them a protective patina. However, you will still need to oil and clean it. My jaw is absolutely dropped when I read the moans of those complaining about rust! Either they are ignorant, which can be cured, or lazy, which can not be fixed, I am amazed! The lack of comprehension and reading skills shows either their lack of knowledge about carbon steel knives or their ignorance about them. The ease of sharpening and maintaining an edge of carbon steel knives is superior to stainless steel knives, which is where excellent cleaning and lubrication are key! A stainless steel knife is hard to sharpen, and it will lose its edge much more quickly than a carbon steel one!
Stainless has only one good thing going for it and that is that it requires no fuss or muss to care for! Knives made of carbon steel do require a bit of care and some time to maintain a healthy (rust free) surface! Carbon steel knives stain naturally, regardless of what you are cutting. In contrast, stainless steel staining is why stainless steel is called stainless steel in the first place! Therefore, forcing a patina gives you control on how the knife looks above time because carbon steel stains, so forcing a patina is awesome because it gives you control and protects the steel from oxidation (rust) while still allowing it to function. Having a patina provides protection from the elements, making care easier to take over time. You can also use mustard with carbon steel in place of vinegar when creating a Damascus steel appearance and finish with endless options for neat finishes. A simple internet search will provide you with plenty of info on how to create a patina for your knives and to protect them from corrosion. We are limited by only our imaginations! Its importance to note that carbon steel knives still need to be handled, and they should be hand cleaned, oiled, and maintained like any other knife, never just put them in a drawer after using them like many stainless knives.

I'll start with the bad first It looks like mine had a half moon-shaped fracture, which was repaired. There is much to be said for the following
If you work at it, you can make it very sharp, and the edge appears to stay sharp. You can finish it with steel rod in the kitchen. Considering this is my first clever, I thought that I was going to chop it like an axe right away. It will work that way, but you can get a much better result by pressing on the back side of the blade and rocking Here is an example. I brought out a package of frozen sausages. My hatchet split the sausage in half and half of it sailed off the table and off the wall as I hacked at it three times. Next, I tried using the rocking method to cut thin slices and was able to do so While it's a cool item to have, I think it isn't much better than the butcher blade that comes with the Ontario old hickory, which accomplishes the same task in largely the same way. However, I recommend it only if you don't have a decent butcher blade yet.

Despite not having the weight I usually prefer in cleavers, it is nimble and well suited for its purpose. As you read reviews, don't pay attention to the 1 star reviews that say "it rusted because I'm too inept to be left alone around sharp objects". you are allowed to possess knives and do not have a severe mental handicap, then you should be able to use it properly. Unless you are really, really stupid, this is carbon steel and it will rust fast. As long as you haven't been born blind and can tie your own shoes, you already know carbon steel requires more maintenance than all the junk made in China. Apply oil right after you've cleaned it! Dry it off as soon as possible after cleaning it! In short, yes. You should do this every time!

It was obvious that this cleaver would need some work to become fully functional, but what I received is unfinished like one could never imagine. It took me over an hour starting with my heaviest India Stone to remove the grind marks and gouges from All that being said, I possess a cleaver made of 1095 steel that is amazingly sharp. There are some issues with the scales and they also need to be improved. However, I didn't go sculpturally extreme here, just sanded a light patina to make it comfortable to hold, and then chopped up tomatoes and sliced limes for margaritas to make the cleaver slightly more rusty. The rabbit I'd like to fricassee is in my fridge. I do not really know how to rate and review this cleaver because the response I received is a one-star I used to own a 5-star knife, but now I have a 4-star knife Knife that I would rate four stars, and if the scales were better, I would rate it five stars.
