When it comes to calibrating it, how do you do ?

Reading the instructions will provide you with the information you need. The calibration is easily accomplished using the water that you'll be mixing into your coolant, where the calibration screw is located near the focusing ring. This will ensure the brix level is reading zero.

Is there a refractometer here that can be used to measure the nutritional density of vegetables? If not, can you provide a link to the right one?

This is not a spectrophotometer it is a standard one to measure

This product can be used with Diary liquid products, right?

I use it for maple syrup. Sugar content is accurately determined with this device. Calibration is simple, involving only distilled water, a screwdriver, and a calibration mirror.

Right out of the box, it works perfectly

As of right out of the box, the Brix Refractometer is great. Upon receiving it, I opened the box and entered the calibration data for it easily and quickly. My goal is to create a homebrew with the correct amount of alcohol and the right taste. Thank you very much.
