The steam table pan has historically been made from all stainless steel, 18-gauge. You can use 25 ga steel in the oven as well as in the freezer. Pans with thinner gauge steel are more likely to warp than those with heavier gauge steel.

Cooking with it is nothing short of fantastic! Stainless steel is a high-grade and it's very durable. As a restaurateur, my only suggestion is that since the restaurant only serves food from Japan The pan, which I highly recommend for purchase, won't fit in your average refrigerator, but it does fit in a variety of pans of similar size.
This is a very nice pan for boiling maple sap.
I found the stainless steel gauge to be much lighter than I imagined. It will be interesting to see how it holds up over time.
This pan is fantastic. I love it so much. I received a perfect fit and exactly what I was looking for.
I do my own butchering (pigs, deer, bear, beef) so these work well for me. The number I try to keep on hand is four.
