It's a large piece of meat since I got the 24 inch Brisket
It is loosely rolled. Those who use Amazon a lot should have a look at their horizontal dispensers. Fortunately, I have wrapped it so it is easy to cut without having to unwrap it.

It is listed here for 24" rolls, but we do sell 18" and 24" rolls.

In all my years of smoking meat, I've mostly just done no wrap and foil only occasionally. In 225°F oven, I placed a 20 lb brisket, at which point after 11 hours the internal temperature was 165°F. Wrapping the meat in three layers of this paper allowed it to reach 195 degrees within 2 hours. Hopefully, it did not dry out during that time. There were no signs of drying out of the Brisket, and folks thought it was the best Brisket they had ever tasted. A great finish can be achieved with this paper.
I found the sheet to be top-quality butcher's paper and it did its job perfectly. Due to the fact that the coating is not on the paper, I was not concerned about it creating a bad taste. If you are cooking low and slow with smoke, this is a must.
We took it all the way to 210 degrees internal, then let it test for 3 hours. There was tons of juice inside, and the meat became a mess when cut. It was still really warm inside, and it melted apart when I cut it.
I would say that it holds juices as well Affects meat's taste but does not change it. The size of this roll of paper is really big, and for an active weekend smoker like me, it is certain that this will last me a year with no problem.
I know there is a lot of paper here, but I'll still be able to use it in the future, since there's plenty left over. My brisket was smoked for over 14 hours on it without any problems. As far as we were concerned, it was very useful.
Trying to fold it to keep the liquid in was a bit awkward, but over all, I was able to do it. This was a nice substitute to foil, and we were very satisfied with it.
We haven't had time to use it for bbq and smoking yet, but we plan to try it on a brisket soon. It is definitely a product I recommend.
