Is this compatible with the GE profile double smart wall oven?

If the appearance of the probe matches that of your current probe, it should fit and function. Other probes for GE ovens are available, but they have a different appearance and thus will not work.

In the oven, this appears to be melting. What is the maximum temperature that it can withstand?

The probe's maximum temperature is not specified in the oven's manual. I've used it several times at 350 degrees Fahrenheit and have had no problems; it works great and removes the guesswork from internal temperature.

The item itself is fairly standard. The stove you're connecting to is the real and most important component. It is both safe and simple to use. It's not difficult in any way. It does not become unbearably hot, but it does become slightly warm. Because this is just a cable, there are no updated options.

The genuine GE probe is functional

I went out and bought a couple of knock-offs. prior to purchasing this GE replacement, off probes that had never worked at all. I paid a lot more for it, but it was worth it to know that it worked and was the right product. Save time and money by getting the real deal, not the cheaper probes!.

This is a good substitute for the original

Fits into the probe hole on my older GE oven, but does not click into place - It's obvious that this isn't the original equipment manufacturer's model. However, it was excellent for meatloaf and Thanksgiving turkey, so I would recommend it at this price.

This was purchased to replace the original, which had served us well for the previous five years. I can't cook without it, and it arrived just in time for Thanksgiving; manually cooking a turkey would have been a pain.
