To put in hot and cold holding pans, I bought eight of these. Before I used them, I first calibrated the temps with a boiling pan of water. Then, I used my crazy accurate Thermapen to detect the temperatures. Most of them were off by quite a bit! The temperature of one device was 120°F at room temperature. In spite of calibrating for cold, many of the 8 read different values at room temperature and in ice water after calibration for hot. There is a lot of slow going. This thermometer is very difficult to use as a thermometer with instant read.
