I would get the 11 if you do not have any room to store the difference in size between the 11 and the 7. Only thing I can think of is that if space were a problem, I would get the 11.
There is no need to secure it at all since it is easy to do and really heavy
While I do not have the 11 Lb Stuffer, I do have the 7 Lb Stuffer which There are likely to be metal gears on this one, as well. A solid mine is what I have.
Making sausage with my family (some of them for even longer) has been a tradition for me for 25 years. The first time we stuffed, the grinder attachment was used. In our first real stuffer, we used an 11 lb. cat food bag. Youtube is. The program has been a godsend to me. It is possible to do batches of up to 500 pounds. It can feed 11 lb. clam shells at once. A bigger machine would be more useful, but the 11 lb. can feed first. It has worked fine. I am now going to get a 7 lb model. I use this model for when I want to work on my own in small batches. I discussed this with my relatives, and they informed me about its suitability for batches up to 50 lb. This is about right.

It has been our experience to make sausages with our KitchenAid mixes in the past. Despite its shortcomings, it is a workable solution. Our mixed is tall, so we placed a plate on top of a bowl so that the sausage will not hang too far from the top. In addition, the mix tray is so small that you constantly need to add more sausage mix, and you must keep it tightly packed to prevent air from getting in. I said that it works, but also that it is a little bit I am sure that anyone who has ever stuffed sausage with a KitchenAid will understand what I am saying. This stuffer will be here soon. Primarily, it is is easy to remove and can be washed off by simply rinsing. only thing I could find negative about this is that I can't see how the plunger part can be removed so it can be cleaned. had to straddle the unit over the sink to clean that part. It was not a deal breaker and I shouldn't have taken a star away for it. I would appreciate if anyone could tell me how to get rid of that pat, if that's possible. The larger stuffing machine can always accommodate a smaller batch of stuffing. The first impression is that it's a very nice unit. Everything is heavy duty, sturdy, and well constructed. It may have a few minor cracks in the castings or its machining, but I doubt these will significantly affect the performance of the automobile. Here are a few thoughts. -In the real world, it is not likely to hold 11 lbs in a batch it is more likely to hold 8 to 10 lbs The weight was 9 pounds. Getting the sausage into the tube and holding the cylinder proved to be the biggest challenges. Despite its ability to swing open, there is no fixed stop that keeps the tube open when it is When it comes to getting it filled completely, it was really a two person job. In no time, I was able to fill it 3/4 full and then add more as necessary. When you let go of the handle, the tube will release the pressure (this is good), but you might get hit (this is bad). You can lock the handle as you rotate it, and it can be locked and rotated. (Known issue) Leaves about 2 cups of sausage in the stuffing tube when using. It is easy to clean and should last a lifetime. (4) The entire construction is stainless steel. The minor issues are relatively insignificant and I think this is an excellent stuffer and an excellent kitchen tool. If you want a good deal, you can't find one better for the money. This has been upgraded to a 5 star rating.
We gave it a quick wash to get rid of oil on all parts, mixed some snack stick meat on top, and it was perfect. The meat can not be mashed, which is another benefit if you typically stuff meat with a grinder that results in a mashed meat product. With this, you have direct control as well as the possibility of making any speed you like. I am not likely to ever use the faster speed gear because it is probably too fast for me. I would only suggest that they find a way to make it suction to the counter so that it won't tip when you turn the handle. Apart from that, there's nothing really wrong with it. In some cases, gear drives used to feed the sausage into the casing cannot be used to stuff the casings. 15 minutes was all it took for me to crank out 5#s of sausage with this machine.
