It was just two weeks ago that I purchased it. When I use a sous vide, I have used it twice, and both times it fully submerses within the lid and allowable water level. As a reference, I use an Anova.

Sous vide rack with a nice Velcro retaining strap I've owned for a couple of weeks now. It is pretty much what it is advertised to be, a high quality adjustable rack with high quality seals. There is no problem with this rack it does what it claims to do. The lipavi C10 has been used on several cooks and the cross bar keeps the food submerged and can be set to two levels (the highest level requires filling the water to the "full line" in a lipavi C10). This rack has also proved to be very useful in another way By putting liquid into sous vide bags, you can freeze it! Using this rack I can fill and hold OPEN vacuum bags vertically while they freeze with contents inside, then vacuum seal them using a cheap external sealer. I've wanted a chamber vacuum for a while so I could vacuum pack soups, sauces, marinades, etc. I have solved the problem!.

In the end, I thought it was a bit pricey for what you got, so I put together a few ad hoc clamps, weights, and cheap cooling racks and messed around for probably a year. I could not have asked for a better rack! Even if a vacuum sealer were used, there was still the risk of incomplete heating if the food floated. In addition to keeping food uniformly submerged, the Geesta rack is versatile, allowing the user to set it up for different packages of differing thickness, so it can be used for either pork chops or chicken breasts.
