There is no insulation on the top. It's a sheet of aluminum that's very thin. I use a kitchen towel as insulation when cooking for long periods of time. Because the bottom isn't flat, the sides taper, and the lid is domed, the pot measures roughly 5" deep x 12" wide.

When I was putting together a sous vide cooking system at home, I came across this cooker. br>br>It works well with the PID temperature controllers from Auber Instruments and Sous Vide Magic, and it's much less expensive than other rice cookers of comparable size. br>br>I only gave it four stars because I haven't tried it for its stated purpose: rice and vegetables in the oven I think it'd work well in that capacity, but it'd be too big for most home cooks. The smallest amount of rice you can cook is a little more than 3 cups of precooked rice, which yields 7 to 10 cups of cooked rice.
Many of our customers use this cooker in conjunction with the SousVideMagic controller. The most serious issue is: They all wish the pot of the rice cooker was bigger, like on a commercial rice cooker! br>When it comes to sous vide cooking, temperature is important, but so is size.
This is also how I control the PID controller from Auber Instruments. I tried using a crock pot at first, but the temperature fluctuated by several degrees due to the crock pot's slow response, both with standard PID settings and after self-adjusting. tuning. br>br>This cooker is much more efficient and quickly stabilizes. br>br>I use the cooker for a variety of things in addition to Sous Vide:
- The Auber controller is used for proofing bread.
- Making a stockpile Use the Auber controller to simmer the meat in water (no plastic bag). Remove the controller and reduce the stock to a thicker consistency by boiling it down. br>br>Anytime I need to simmer something for more than a few minutes, I'll use this cooker with the controller. The combination allows me to precisely control the temperature and can even be used as a double boiler with the addition of a metal bowl. br>br>I wish I could use the Auber controller with one of my stove's burners.
I bought this rice cooker to pair with a PID for sous vide cooking, just like the previous reviewer. I think it's fantastic and admire how big it is. I went from a 5-star rating to a 4-star rating. To this 38-cup cooker, cup, and I'm very happy with it. The heating coil is quite large, and once it gets going, it can heat water at a rate of about one degree per second. In about 15 minutes, I heated 38 cups of water from room temperature to 150 degrees. It will take 20 minutes. If you're looking for a large capacity rice cooker that can also be used for sous vide cooking, this is a great option that won't break the bank.
I was looking forward to using my new rice cooker, but I was disappointed with the results. I followed the recipe to the letter, but the rice was undercooked and burned. I wish I had the option to return it, but I opened it just a few weeks after receiving it.
