There's no doubt that it's thin and sharp. Hard meats can be sliced into thin, narrow slices with this machine. The knife commonly seen in Italy and Spain. This is not a museum piece but a working machine. Although it won't perform much better than an actual deli slicing machine, I don't cut enough cured meat to need a dedicated machine. As long as I'm getting decent slices, I don't mind the wonky lines. Identifying it as a characteristic would make sense to me.

As a hobby, I make my own country hams like those in va style, as well as a few prosciuttos and spanish hams. No matter what brand of slicing knife you use, it is hard to slice them razor thin. The blade on this knife is longer so I don't have to saw as much, but I do have a very sharp knife. It may not be the best ham knife you can buy, but really I only slice ham 3 to 4 times a year, so I don't need a 200 dollar knife. As long as you use it when you need it and if you take good care of it, you will not have any problems. As it is, it should stay that way. In addition, you may want to consider purchasing about 12 of these instead of the 200 on a fancy ham knife. You can use it to slice ham into thin, paper thin slices. It works the same way as the salmon knife. This item is slightly longer than most drawers and won't fit in most cupboards, but it is functional.
It is a really excellent stamping knife. I have high quality (forged) knives and this is on par with them in terms of performance. This is the second time I've purchased.
