I have been looking for one that I could thinly slice cold fish with Since we have been using cold smoked salmon and lox for some time, my regular kitchen knives (flat sided chef, slicing, filet, and serrated knives) tear up the thick slices of cold smoked salmon and lox. Earlier this evening, I had used it on some smoked salmon and it worked beautifully. As the thin blades with the scalloped sides sliced thinly without tearing the salmon, it sliced just right without tearing. Though the blade isn't as sharp as it could be, and the handle is plastic, the knife is a good value, and the price is acceptable. As my next task, I must sharpen the blade, since it isn't very sharp out of the package.
Flexibility is mentioned in the description, and it is indeed flexible. If it were a bit more rigid, I'd like it more. A sharp, well-made knife I use to skin animals is very good for skinning filets after getting used to it a bit.
Salmon-cleaning knife and knife for slicing salmon are the best.
This salmon knife is very good at a low price. It's flexible and easy to maintain a razor sharp edge. My job has been dressing meat, carving roasts, hams, steaks from loins, etc. I can do all of this.
This was purchased for cutting homemade lox, and I'm glad I bought.
It is quite flexible, so it is not suitable for stiff bread.
