There is a lot of sharpness in this and the balance is perfect. There are two forms of carbon Leaving it in the sink is not recommended.
I purchased it from another vendor years ago, and use it on a daily basis. There are several other Chinese cleavers and Japanese gyotos in my collection, but my favorite it. The heat-treat and grind must have been just right because it cuts extremely well. It also retains the edge for a much longer period This knife has a fascinating feel and utility, so I keep it in my daily carry due to its feel and utility. I have other "better" knives but this one seems to have a special magic.
