I really like how light it is. It was my first Shun knife, and I remember being quite impressed with it, until I I dropped the knife from a height of about three feet (and as you know, I didn't try to catch it), and it broke into two pieces*. I had expected it to be a single piece knife for the price.

You get a lot for your dollar with This thing has done the job for more than 150 hours and is holding up so far. So far, I haven't had to sharpen it. You've made my day! Although the handle is light, it does not interfere with your confidence to the point where it is unbearable. The cutting edge of surgery. Be aware of those who do not support you. The feel and sharpness are great, but the steel isn't the best

For the past 15 years, I've been a chef and this knife has become an essential part of my kitchen so I can make fine knife cuts without having to bring my expensive knives on the job. Although I was a bit disappointed in the cheap feel of the handle, I liked the feel of the gun. Blade felt solid, but the tip was thin and seemed to be a little thin as well. In spite of using it for simple herb and vegetable cuts, meat cleaning and portioning (not much meat butchering with bones) and fish fileting, it held up and stayed sharp with bi weekly shape-ups. However, the tip broke when I recently broke down some semi hard cheese. However, I did not use it for very hard things like pumpkin or bones, but it was apparently not strong enough steel to make it through pecorino. Too bad, but I still think it was worth 60 bucks.

I have ever used a kitchen knife that is sharper than an 8" knife

After receiving the Shun Sora small 4" knife, it quickly became apparent what a great knife it is. I find it to be very easy to use and very sharp. This one was received and I tried cutting a six pound beef roast into 1/2" cubes with it. The 10" Henckle can be a pain in the neck if this is not done correctly. I found that with this knife, it was a great deal easier and more accurate. * Other factors include razor sharpness and gliding through meat without a hitch. This is a great knife for an affordable price, and we were very happy with the one we found. After having used this knife, it is hard to imagine a knife from another brand.

I have now used a Shun for the first time and it has been a pleasure. The edge on this Shun knife is much better out of the box than that of other German name brand knives. You can hold the handle very comfortably, and it feels great in your hand. While it is not a heavy duty knife, it is perfect for everyday use on meats and veggies. In summary, I am very pleased with its performance and will post a follow up review to this one in a year to see how well it has held.

I am a Disney chef, and I use it every day to prepare food for work and This knife is razor sharp, ready to use. The use of. I am purchasing another one this evening. My other one, the same exact one, was a gift, the tip chipped off (totally my fault), but I am saying all of that to say that my original one was a gift. This knife slices brilliantly no matter what I'm cutting, and it's been in use nearly every day and more often all the time. Designed to last and be I have once more made another great investment with this!.
