So sharp, so beautiful, and so sturdy. My fingers are afraid to use something so shiny and mirror polished. February was the month when I purchased this fine chefs knife. My mistake was to leave it in a sink filled with water overnight a few months later. As if seven bites had been taken off the edge of the blade due to my mistake, the edge pitted. It was extremely hard to find the right remedy over the phone, but the company's representatives were extremely helpful! As the blade was so new, they would not charge me to sharpen it. I should send it to them for a professional sharpening. Less than a week after I sent it in, I received it back. My damage was almost indiscernible, so it is as good as It is an absolute pleasure to use this knife and to deal with this Yoshihiro, thank you very much!.

Among all the knives in my collection, this one is my favorite! Since it has a rounded tip, it can be rocked easily, making it useful for shaving and mincing rocks. I can glide through shallots with ease with this! In addition, I have the Gyoto and the Petty knives of the same design, but I have to admit that this nikiri is always the first knife I dig out of my bag each day! The knife has gone through extensive prep, and if it is sharpened daily on a whetstone and properly maintained, it will stay sharp longer than any knife in the kitchen of Disney's competitive kitchen. I strongly urge you not to pass this up, if you are debating between this and another brand or another style, That's really the only negative I have to say! I'm so sorry for waiting.
