With this knife we can cut vegetables easily, and we also like to use it for sushi. Nevertheless, cleaning the blade is a very difficult task. The soft side of a regular sponge won't do, and the scrubber side of a non-detergent will to a certain extent The surface will be damaged if the sponge is abrasive. In the course of using the wheelchair regularly, we discovered some pitting and rust after about 6 months. We have a bunch of knives that are over a decade old and in good condition. While I realize this knife is not an expensive one (the others aren't too expensive either), I wasn't expecting it to be so difficult to keep clean and free of.

I will be buying more for presents and other knives from the same company as well. The moment it arrived, it was the sharpest knife I had ever seen. Gravity and a little back and forth motion enabled it to slice through a ripe tomato. It is a knife of top notch quality, designed and made to perfection, right down to the blade stamp.
I had to repost my previous feedback because it was hidden for some reason. It seemed at first that the knife wasn't as sharp as it should be and it was a bit lite. I was a fan of it before sharpening it and am now a fan after using it for a while. Our go-to knife in the kitchen has become this easy to handle, extremely sharp Shun knife. It keeps its edge as well as any of my Shun knives. In addition to reducing her blood pressure, I have noticed a reduction in mine. It is a scary proposition to have her and a knife in hand.
A little olive oil and a pass on paper towels will go a long way in making it happy. There is nothing to dislike about this knife - balance is great, and it maintains its edge - a few passes over a leather strop every so often are all it takes to restore it to its original.
