A cleaver is made by pounding superheated layered steel bars repeatedly until a uniform, straight shape is achieved. There is something very appealing about how each knife looks rustic and unique. Because this knife was handcrafted there will be occasional imperfections and you might need to adjust it a bit to fit your meticulousness. The knife comes pretty sharp, but I prefer to sharpen mine with a steeper angle because I intend to use it primarily as a vegetable knife. As for the handle, it is a bit rustic. It may be necessary to add some mineral oil and maybe use a touch of It's better textured to provide a better grip, and I oiled mine with mineral oil as well. In the factory, the blade is wrapped up in a plastic bag and is If you wash off the oil and continue to use the knife, IMMEDIATELY DRY IT! As others have stated, it may need some work to make it the perfect knife for you, however, most people do not seem to understand what a cai dao knife is for or how to care for it properly. The spine is not supposed to be thick all the way through, it is only supposed to be thick at the top for strength and tenderizing. The edge of the sword is made of hardened steel with a strong outer layer and core assembled in a sandwich billet. Vegetables and boneless meat are the only items that can be cooked with it. The edge geometry is exactly what I want for that type of use, and is well built for that purpose. It is a bit flat at the front and curved toward the hand for both chopping and pushing. There is high-quality content in this product The steel is high-carbon, so you should wash and dry it quickly after each use, and add a thin coat of oil to store it. In my opinion, the handle is cheap wood, but you should have known that based on the pictures and price. It simply isn't meant to be fashionable. This knife is a workhorse.
It comes in paper packaging. My blade is razor sharp though I went over it again to make it even more so because I have a weirdo streak in my head. It's easy to grip and doesn't tend to stick to food. It weighs about 1 ounce less than my Winco knife, and yet it feels In review, this is quite an excellent knife. Not for everyone, so if you want your knives to stay in good shape, I would recommend passing. You should consider a Mercer or a Winco stainless steel. The cai dao that is built for functionality is a good choice for someone looking for a good cai dao.

The knife will be returned to Amazon immediately once I find out about the deceptive practices involved. There is a great deal of roughness and unevenness on the blade surface, and it seems that the wooden handle might crack after a short period. Exactly zero weight is contained in this "cleaver". About 8 lb (compared to As reported in the product description, there is no weight for this product. "). It has to be the worst example of manufacturing quality for goods made in China! Onions, carrots, and celery are cut from the root. This knife comes with a sharp edge, but I made it even sharper by hitting it with a diamond stone. As well as being extremely rough, it is also very hot. With a little work, it becomes razor sharp after having a good edge on it. It's important to scrub the surface with an aggressive abrasive pad to remove the oxidation and whatever else is on the surface. My only means of cleaning up the edges was to take a grinder to it. After polishing with a 600 grit pad on my grinder, I followed up with a sandpaper. There will eventually be a break in the handle. I found the wood to be rather soft, and the attachment is poor. I have found that if I take care of it and oil it, it will last a long time.

For $20 this is a fun knife. It sounds and feels brittle when clanging around so use caution around frozen items and large bones.
